Not sure if any staff member cares about their nationality being popped up. But some of those don't have their "come from" posted at their profile, meaning that they might want it to be kept private. I might have missed agreements of the staff members, but disclosure of personal information is against the rules (unless agreed to or already shown by themselves). Just in case ever this might become an issue, it might be just better to be at the safe side and remove the "irrelevant" information.

Only VetOp+ are allowed to fly on Lava, but I'm not too sure about RoF.

Seeing no one answered your question. Operators on the Elysium server cannot fly, and do not have creative mode, though ones holding a staff role or above do have creative mode.
